Afelia


Afelia

This dish is cooked with pork but we have used mutton instead

Ingredients

400 gm of boneless mutton
cut into chunks
2 tsp of coriander powder
1/2 tsp of castor sugar
3 tbsp of olive oil
2 large onions sliced
salt and pepper to taste
For garnishing:
coriander leaves
2 cups of fruit wine or mixed
fruit juice

Method
Rub the coriander powder, salt and pepper in the mutton and leave aside for 3-4 hours.
Heat 2 tbsp of the oil in a pan and brown the mutton pieces quickly and then transfer to an
ovenproof dish. Add the remaining oil to the pan and fry the onions until translucent. Stir
in the fruit wine and a little salt and pepper and bring to a boil.

Pour this over the mutton and cover with a lid. Bake in an oven till the mutton is tender.
Serve garnished with fresh coriander. Serve with bread, a salad and few olives.
