Asian Grilled Salmon with Julienned Vegetables

Serve with brown rice. This can be sauteed instead of grilled if you wish.

Ingredients
• 2 tablespoons Dijon mustard
• 3 tablespoons soy sauce
• 6 tablespoons olive oil
• 1 / 2 teaspoon minced garlic
• 4 (8-ounce) boneless skin-on fresh salmon fillets
• Lynn University Julienned Vegetables (recipe given)

Method
Combine the mustard, soy sauce, oil and garlic. Place the fillets in a single layer in a nonreactive baking dish. Spread a portion of the mustard mixture over the top of each. Let sit 10 minutes.

Preheat a gas or charcoal grill. Grill the fish about 10 minutes until cooked through. (We recommend you don't turn the fillets over or you will lose much of the mustard coating.) Serve with the vegetables.
Makes 4 servings.
