Polpettes


Polpettes

Ingredients

400 gm of boiled mashed potatoes
100 gm of grated cottage cheese – paneer
2 tbsp of grated feta cheese
1 tsp of lemon juice
salt to taste
1/2 tsp of pepper powder – or more as per taste
2 tbsp of chopped spring onions with the white and green portion
1 tsp of chopped dill - fresh green soya leaves
1 beaten egg
1 cup maida for dredging or
coating the polpettes
3-4 tbsp of olive oil for pan frying

Method

Place the mashed potatoes in a mixing bowl and add the paneer, the cheese, spring onions, dill, beaten egg, salt, taking care that the cheese will have salt and pepper powder
and lemon juice.
Mix well and cover the mixture and leave in the fridge to chill for 1 hour till firm.
Divide the dough into small portions and shape each portion into round balls and flatten each ball.
Dredge or coat in flour and fry in a non-stick pan with few tsp of oil.
Fry a few at a time till golden brown on both sides. Serve at once.
