Shrimp Cocktail Salad


Shrimp Cocktail Salad

A tasty chilled salad with shrimp that has been tossed with cocktail sauce and dill.

Ingredients

* 1/3 c mayonnaise
* 3 Tbsp seafood cocktail sauce
* 3/4 lb frozen shelled deveined cooked bay shrimp, thawed
* 1 c coarsely chopped celery
* 3 Tbsp coarsely chopped dill pickle
* 6 c shredded leaf lettuce

Method

1. In small bowwl, combine mayo and cocktail sauce; blend well 2. In medium bowl, combine shrimp, celery and pickle. Stir in mayo mixture. Serve immediately, or cover and refrigerate unitl serving time. 3. To serve, arrange lettuce on large serving platter, or on individual serving plates. Spoon salad onto lettuce.

Notes: To reduce the fat by about 9 grams per serving, use light mayo instead of regular mayo.
